These cheesy pies are like pancakes. Serving them with a drop of honey give them an unbelievable salty – sweet taste!
It is very easy to prepare them and really worth to make them instead of buying something ready made.
We can bake them either on a frying pan or in the oven.
Ingredients
For the dough
250 gr all-purpose flour
170 gr lukewarm water
1-2 tablespoons extra virgin olive oil
1 teaspoon salt
For the filling
300 gr feta cheese
100 gr Greek yogurt (it is preferable because it has less water)
We can add pepper, oregano, thyme dry or fresh according to our taste.
For baking in the oven – optional
1 egg yolk diluted with a spoon of water to brush each pie before placing them in the oven
Preparation process
For the dough
- In a bowl we add flour, water, olive oil, and salt.
- Mix using a spoon till all ingredients are fully combined.
- Then knead by hand till we have a nice and smooth dough.
- Let the dough to rest for 30 minutes.
For the filling
- In a bowl we add feta cheese and we break it in pieces – some small and some others a bit bigger in order to create an interesting texture in the pies.
- Add yogurt and mix using a fork.
Assembling
- Divide the dough in 10 equal pieces.
- Dust working surface with some flour.
- Using a rolling pin or by hand we open each piece of dough in circles of about 15 cm.
- Place a full tablespoon of the filling in the middle of each pie.
- Take a small bowl with water and using our fingers we put water round around the pie.
- Connect one edge of the pie with the other – create a C schema – connect the dough on the edges using hands.
- Using a fork press the edges of the pie where the connection is – therefore we have a nice design and we “secure” the connection.
Baking
1st way – by frying
- Put a non-stick pan on medium – high heat.
- Bake each pie 3-4 minutes per each side – till they get a nice golden-brown color.
2nd way – by baking in the oven
- Preheat oven to 170 C – set to fan.
- Cover the bottom of a baking mold with a piece of parchment paper.
- Place the prepared pies on it – we may need -2- molds, depends how big we make the pies.
- (Optional: we can brush each pie with some egg yolk diluted with some water).
- Bake for 15-20 minutes, till they get a nice golden-brown color.
Serving
When ready we take them out from the pan / oven and transfer to a plate; pies can be consumed directly, as they are hot, or even later when they get cold.
Tips & Tricks
Adding a little bit of honey on top make these pies an unbelievable tasty desert!
