Simple Greek cake with white chocolate topping

This cake is quite Greek since we use Greek yogurt and for topping Greek jam with pieces of fruits!

It is also very simple and fast to prepare it: 20 min preparation time and about 1 hour baking time.

So, for approximately 10 portions we need the following:

280 gr sugar

200 gr butter – room temperature, cut in cubes

4 medium eggs (50 gr each) also in room temperature

250 gr Greek yogurt 10% fat (room temperature)

350 gr all purpose flour

10 gr baking powder

Preparation process

Preheat the oven in 170 C

Take a baking pan of 20 cm and put some butter and flour.

A nice technic to avoid keeping a lot of flour on the bottom is to put first the butter then put the pan in the refrigerator for 5 – 10 min and then add the flour to cover the bottom and the round around part. Then turn it in order any flour excess to be taken out.

Put in mixer bowl the 280 sugar with the 200 gr butter cut un cubes and beat — for about 4-5 min in high speed – till they become fluffy and sugar is dissolved.

Then continue beating and add one by one the eggs – put the next egg after the previous one us totally incorporated.

Mix the 350 gr of flour with the baking powder.

It is always better to shift the flour with the baking powder before using it – in this way becomes more fluffy and take some air that helps the cake to become even more fluffy😀

Add the flour with the baking powder and stir gently with a spoon till flour is totally incorporated. We don’t beat the mixture in order the gluten not to be activated – otherwise we will have a “bready” cake 😳

Put the mixture in the baking pan and bake for 1 hour in the 170 C preheated oven or till it takes a nice golden-brown color. When taking out the cake from the oven check is it is well baked by putting a knife or a tooth pick in the center of the cake. If it goes out clean then it is ready otherwise we have to let it for another 10 min to bake.

We let it for 5 min to cool a bit and then we take it out and we put it on a grade to cool totally – if we can resist 😂 not start cutting.

For topping we can put some melted chocolate- white or black or both. Or when serving we can add some jam – preferably with pieces of fruits.
